Grumpy Fish Distillery began in the best of ways - two friends experimenting with creating a high quality small-batch gin from carefully selected ingredients. At Grumpy Fish, we maintain absolute control over the crafting of our product from start to finish.
We start with a high quality, locally produced base spirit sourced from the Swan Valley. We then thoughtfully hand-select botanicals and distil the spirit slowly in small batches, to time-honoured traditions - resulting in an impeccably well-balanced, bespoke drink.
Grumpy Fish Distillery had humble beginnings at Paul Conti Wines - a third generation family business in Woodvale, north of Perth. We honed our craft at Conti’s and spent many happy hours there. With growth comes change, and in 2021 Grumpy Fish moved premises to a unit in Gnangara, a stone’s throw from Conti’s.
We use a column still and a carter head still, which purifies the alcohol and then passes the vapour through a basket containing botanicals.
We don’t steep or macerate botanicals as we believe the carter head process leads to a softer, more sophisticated spirit.
The distillation process divides alcohol into its constituent parts, or fractions. The distiller’s art is about discerning where to make “cuts” - what to keep and what to discard. We only use the best of the hearts cut in our product. This lowers our yield and increases cost. However, our mantra is to never compromise on quality.
Grumpy Fish Gin is a fragrant, well-balanced gin that starts strongly with juniper, and rounds out to finish with hints of lavender and geranium. Perfect with tonic and refreshing citrus, or cucumber over ice.
